INGREDIENTS

2 pounds Yukon Gold potatoes, peeled and diced

6 hard-boiled eggs, chopped

½ cup mayonnaise

2 tbsps Dijon mustard

2 tbsps sweet pickle relish

½ cup celery, finely diced

¼ cup red onion, finely diced

1 tbsp apple cider vinegar

1 tsp kosher salt

½ tsp black pepper

1 tbsp chopped fresh parsley

Paprika, for garnish

INSTRUCTIONS

  1. Bring a large pot of salted water to a boil.
  2. Add the potatoes and cook until fork tender, about 12 to 15 minutes.
  3. Drain and allow the potatoes to cool slightly.
  4. In a large bowl, combine the mayonnaise, Dijon mustard, pickle relish, vinegar, salt, and pepper.
  5. Fold in the potatoes.
  6. Add the chopped eggs, celery, onion, and parsley.
  7. Stir gently until evenly coated.
  8. Cover and refrigerate for at least 1 hour before serving.
  9. Sprinkle with paprika just before serving.
