DESCRIPTION

Hollandaise is one of the five classic French mother sauces and a staple for elegant brunches and breakfast dishes. Made with egg yolks, butter, and fresh lemon juice, this rich, velvety sauce is famous for topping Eggs Benedict but is equally delicious over asparagus, salmon, roasted vegetables, or grilled chicken.

INGREDIENTS

3 large egg yolks

1 tbsp fresh lemon juice

½ tsp Dijon mustard

½ cup unsalted butter, melted

INSTRUCTIONS

  1. Fill a small saucepan with about 1 inch of water and bring it to a gentle simmer.
  2. Place the egg yolks, lemon juice, and Dijon mustard into a heatproof bowl.
  3. Set the bowl over the simmering water, ensuring it does not touch the water.
  4. Whisk constantly until the mixture becomes pale and slightly thickened.
