These classic Buffalo-style hot wings are inspired by the legendary Anchor Bar recipe from Buffalo, New York.   • 3 pounds chicken wings, separated into flats and drumettes
  • Peanut oil, for frying

For the Buffalo Sauce

  • ¾ cup Frank's RedHot Sauce
  • ¼ cup unsalted butter, melted

  • Blue cheese dressing

Instructions

Step 1: Prepare the Wings

Pat the chicken wings completely dry with paper towels. Arrange them on a wire rack set over a baking sheet and refrigerate uncovered for at least 8 hours or overnight. This helps create extra crispy wings.

Step 2: Heat the Oil

Fill a deep fryer or heavy-bottomed pot with peanut oil and heat to 365°F (185°C).

Step 3: Fry the Wings

Working in batches, carefully fry the wings for 6–8 minutes, or until golden brown, crispy, and cooked through. Transfer to a wire rack or paper towel-lined tray.

Step 4: Make the Sauce

In a large bowl, whisk together the melted butter and hot sauce until smooth.

Step 5: Toss and Serve

Add the hot wings to the bowl and toss until evenly coated. Serve immediately with celery sticks, blue cheese dressing, and plenty of napkins.
