Wings

3 pounds chicken wings, separated

⅞ pint peanut oil (approximately 2 cups), for frying

Wing-Ding Sauce

¾ cup chili sauce

3 tablespoons lemon juice

3 tablespoons vinegar

1½ tablespoons prepared yellow mustard

1½ tablespoons Worcestershire sauce

⅜ cup onion, finely chopped

¾ cup green bell pepper, finely chopped

¾ teaspoon salt

¾ teaspoon ground black pepper

⅜ teaspoon cayenne pepper


Instructions

Prepare the Wing-Ding Sauce

  1. In a mixing bowl, combine:
    • Chili sauce
    • Lemon juice
    • Vinegar
    • Mustard
    • Worcestershire sauce
    • Onion
    • Bell pepper
    • Salt
    • Black pepper
    • Cayenne pepper
  2. Stir until thoroughly combined.
  3. Cover and refrigerate for approximately 1 hour to allow the flavors to develop.

Prepare the Wings

  1. Separate the chicken wings into flats and drumettes and remove the tips.
  2. Pat the wings dry with paper towels.
