Chicken

3 pounds chicken wing drummettes

Thai Marinade

¼ cup garlic, coarsely chopped

1 bunch cilantro, chopped (reserve some leaves for garnish)

1 teaspoon ground turmeric

1 teaspoon curry powder

1½ teaspoons cayenne pepper

1 tablespoon sugar

¼ teaspoon salt

3 tablespoons Thai fish sauce

Basting Liquid

½ cup canned coconut milk

Thai Dipping Sauce

½ teaspoon dried cayenne pepper

2 garlic cloves, finely chopped

1 teaspoon brown sugar

¼ teaspoon salt

½ cup Chinese red rice vinegar

1 green onion, thinly sliced

1 tablespoon chopped cilantro

Garnish

Fresh cilantro leaves


Instructions

Prepare the Marinade

  1. In a blender or food processor, combine:
    • Garlic
    • Chopped cilantro
    • Turmeric
    • Curry powder
    • Cayenne pepper
    • Sugar
    • Salt
    • Fish sauce
  2. Blend until smooth.
  3. Place the chicken drummettes in a large bowl or resealable bag.
  4. Pour the marinade over the chicken.
  5. Toss thoroughly to coat.
  6. Cover and refrigerate overnight.

Prepare the Dipping Sauce

  1. In a small bowl, combine:
    • Cayenne pepper
    • Garlic
    • Brown sugar
    • Salt
    • Red rice vinegar
    • Green onion
    • Cilantro
  2. Stir until the sugar dissolves.
  3. Refrigerate until ready to serve.

Grill the Chicken

  1. Preheat a grill to medium-high heat.
  2. Remove the chicken from the marinade.
  3. Place the drummettes on the grill.
  4. Grill for approximately 20 to 25 minutes.
  5. Turn frequently for even cooking.
  6. Brush generously with coconut milk throughout grilling.
  7. Continue cooking until lightly charred and the internal temperature reaches 165°F (74°C).
