Ingredients

Wings

1½ pounds chicken wings, separated into flats and drumettes, tips removed

¼ teaspoon black pepper

Sauce

1 cup onion, finely chopped

2 tablespoons ketchup

3 tablespoons orange juice

1 tablespoon butter

1 tablespoon Worcestershire sauce

3 teaspoons honey

3 drops hot pepper sauce

Blue Cheese Dip

1 cup celery, finely diced

½ cup plain Greek yogurt

¾ ounce crumbled blue cheese

1 tablespoon plus 1 teaspoon mayonnaise


Instructions

Prepare the Sauce

  1. In a microwave-safe bowl, combine:
    • Chopped onion
    • Ketchup
    • Orange juice
    • Butter
    • Worcestershire sauce
    • Honey
    • Hot pepper sauce
  2. Microwave on high power for 4 minutes.
  3. Stir once halfway through cooking.

Prepare the Wings

  1. Separate the chicken wings into flats and drumettes and remove the tips.
  2. If desired, remove excess skin.
  3. Arrange the wings in a single layer in an 11 x 7-inch microwave-safe baking dish.
  4. Sprinkle with black pepper.
  5. Spoon half of the prepared sauce over the wings.
  6. Microwave on high power for 6 minutes.
  7. Turn the wings over.
  8. Spoon the remaining sauce over the wings.
  9. Microwave for an additional 6 minutes.
  10. Continue cooking until the juices run clear and the wings reach an internal temperature of 165°F (74°C).

Prepare the Dip

  1. In a small bowl, combine:
  • Diced celery
  • Greek yogurt
  • Blue cheese
  • Mayonnaise
  1. Stir until blended.
  2. Refrigerate until ready to serve.

Serve

  1. Transfer the wings to a serving platter.
  2. Serve with the blue cheese dip on the side.

Conventional Oven Alternative

  1. Preheat oven to 375°F (190°C).
  2. Bake wings for 40 to 45 minutes, brushing with sauce halfway through.
  3. Continue baking until fully cooked and lightly caramelized.
