SHIRRED EGGS (Creamy Oven-Baked Eggs with a Buttery Golden Finish)

Shirred Eggs

Shirred Eggs are a timeless breakfast classic featuring gently baked eggs with tender whites, creamy yolks, and a buttery finish. Baked in individual ramekins, they're perfect for an elegant brunch, a light breakfast, or served alongside toast, fresh fruit, or roasted potatoes.

Ingredients

1 tsp unsalted butter, divided, plus grease pan

2 tsps fine fresh breadcrumbs

4 large eggs

¼ tsp kosher salt

⅛ tsp black pepper


Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Lightly butter two individual ramekins or oven-safe baking dishes.
  3. Sprinkle 1 tsp of fresh breadcrumbs into the bottom of each prepared dish.
  4. Carefully crack 2 eggs into each ramekin, taking care not to break the yolks.
  5. Place the ramekins into a baking pan and carefully pour hot water into the pan until it reaches about halfway up the sides of the ramekins.
  6. Bake for 12–16 minutes, or until the egg whites are completely set while the yolks remain cooked to your preferred doneness.
  7. Remove the ramekins from the water bath and top each serving with a small pat of the remaining butter.
  8. Season with salt and black pepper. Serve immediately.
