2 pounds chicken wings, separated
6 serrano peppers
6 red chili peppers
10 jalapeño peppers
2 cups white wine
1 bottle hot pepper sauce
½ bottle Worcestershire sauce
10 tablespoons cayenne pepper
10 tablespoons hot pepper sauce
1 tablespoon salt
3 tablespoons black pepper
½ cup vinegar
¼ cup granulated sugar
Instructions
- Separate the chicken wings into flats and drumettes and remove the tips.
- Wear food-safe gloves when handling the peppers.
- Place the serrano peppers, red chili peppers, jalapeños, white wine, hot pepper sauce, Worcestershire sauce, cayenne pepper, additional hot pepper sauce, salt, black pepper, and vinegar into a blender.
- Blend until smooth.
- Place the wings in a large nonreactive bowl or container.
- Pour the pepper marinade over the wings and toss thoroughly to coat.
- Cover and refrigerate for 5 days, turning occasionally.
- Preheat the broiler.
- Remove the wings from the marinade and arrange them on a broiler pan.
- Broil for approximately 15 minutes, turning once halfway through cooking.
- Cook until the wings reach an internal temperature of 165°F (74°C).
- Meanwhile, pour the reserved marinade into a saucepan.
- Add the sugar and bring to a boil.
- Reduce the heat and simmer until the sauce thickens into a glaze.
- Brush the glaze over the cooked wings.
- Return the wings to the broiler for approximately 5 minutes to caramelize the glaze.
- Transfer to a serving platter and serve immediately.
