Ingredients

20 pounds chicken wings, separated

3 cups cayenne pepper sauce

2 cups clarified butter, hot

Blue cheese dip, for serving

Instructions

  1. Separate the chicken wings into flats and drumettes and remove the tips if necessary.
  2. Choose one of the following cooking methods:

Frying Method

  1. Heat oil to 400°F (204°C).

Baking Method

  1. Preheat the oven to 425°F (218°C).

  4. Turn the wings over and bake for an additional 30 minutes until browned and crispy.
  5. Remove from the oven and drain any excess grease.
  6. In a very large mixing bowl, combine the hot cayenne pepper sauce and clarified butter.
  7. Whisk until smooth and fully blended.
  8. Add the hot wings and toss thoroughly until evenly coated.
  9. Transfer to serving platters.
  10. Keep warm until serving.
