Ingredients

Wings

3 pounds chicken wings, separated

2 tablespoons aluminum-free baking powder

1 teaspoon sea salt

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon black pepper

Optional Keto Buffalo Sauce

½ cup unsalted butter, melted

⅓ cup hot sauce

1 teaspoon garlic powder


Instructions

Step 1: Dry the Wings

Pat the wings very dry with paper towels. The drier the skin, the crispier the wings.

Step 2: Season

In a large bowl combine: Baking powder, salt, garlic powder, onion powder, smoked paprika, and black pepper. Add wings and toss thoroughly until evenly coated.

Step 3: Rest

Place wings on a wire rack set over a baking sheet.

Refrigerate uncovered for:

  • Minimum: 1 hour
  • Preferred: Overnight

This dries the skin further and improves crispiness.

Step 4: Bake

Preheat oven to 250°F (121°C).

Bake wings for 30 minutes.

Increase oven temperature to 425°F (218°C).

Continue baking for 40-50 minutes, turning once halfway through.

Wings should be deeply golden brown and crispy.

Step 5: Sauce (Optional)

Whisk together: melted butter, hot sauce, and garlic powder.

Toss cooked wings in sauce immediately before serving.
