1 tbsp butter
For the Benedict
4 English muffins, split
8 large eggs
1 tbsp white vinegar
For the Hollandaise Sauce
3 egg yolks
1 tbsp fresh lemon juice
½ cup unsalted butter, melted
¼ tsp kosher salt
â…› tsp cayenne pepper
INSTRUCTIONS
- In a mixing bowl, gently combine the crab meat, breadcrumbs, egg, mayonnaise, Dijon mustard, Worcestershire sauce, parsley, and Old Bay seasoning.
- Form the mixture into eight crab cakes.
- Melt the butter in a large skillet over medium heat.
- Cook the crab cakes for 3 to 4 minutes per side until golden brown.
- Keep warm.
- Fill a saucepan with water and bring it to a gentle simmer.
- Add the vinegar.
- Crack each egg into a small bowl and carefully slide it into the simmering water.
- Poach the eggs for 3 to 4 minutes.
- Remove with a slotted spoon and drain well.
- To prepare the Hollandaise sauce, blend the egg yolks and lemon juice until pale.
- Slowly drizzle in the melted butter while blending continuously.
- Blend until thickened, then season with salt and cayenne.
- Place two toasted English muffin halves onto each serving plate.
- Top each half with a crab cake.
- Add a poached egg.
- Spoon the Hollandaise sauce generously over the eggs.
