These Chicken Wings Pacifica are marinated in a rich blend of soy sauce, brown sugar, butter, and dry mustard, creating a deeply flavorful glaze that caramelizes beautifully during baking. Sweet, savory, and irresistibly tender, they're perfect for entertaining and can be served hot or cold.

Ingredients

45 chicken wings, separated

2 cups soy sauce

2 cups packed brown sugar

1 cup butter

2 teaspoons dry mustard

1½ cups water


Instructions

  1. Separate the chicken wings into flats and drumettes and remove the tips.
  2. Arrange the wings in a large shallow baking pan.
  3. In a saucepan over medium heat, combine the soy sauce, brown sugar, butter, dry mustard, and water.
  4. Stir until the butter melts and the sugar completely dissolves.
  5. Remove from the heat and allow the marinade to cool.
  6. Pour the cooled marinade over the wings.
  7. Cover and refrigerate for 2 hours, turning the wings occasionally.
  8. Preheat the oven to 350°F (177°C).
  9. Bake the wings in the marinade for 45 minutes.
  10. Turn the wings once during cooking and spoon the marinade over them several times to encourage even glazing.
  11. Continue baking until the wings are golden brown, caramelized, and reach an internal temperature of 165°F (74°C).
  12. Remove the wings from the pan and briefly drain on paper towels.
  13. Serve hot or allow to cool and serve at room temperature.
