Ingredients

4 pounds chicken wings, separated into flats and drumettes, tips removed

1¼ cups hoisin sauce

¾ cup plum sauce

½ cup soy sauce

⅓ cup apple cider vinegar

¼ cup dry sherry

¼ cup honey

6 green onions, minced

6 garlic cloves, minced


Instructions

  1. Remove the wing tips and separate the wings into flats and drumettes.
  2. In a large mixing bowl, combine the hoisin sauce, plum sauce, soy sauce, apple cider vinegar, dry sherry, honey, green onions, and garlic.
  3. Mix thoroughly until well blended.
  4. Add the chicken wings and toss until completely coated.
  5. Cover and refrigerate for at least 24 hours, turning occasionally to redistribute the marinade.
  6. Preheat the oven to 375°F (190°C).
  7. Line a baking pan with aluminum foil and place a wire rack over the pan.
  8. Lightly coat the rack with nonstick cooking spray.
  9. Remove the wings from the marinade, reserving the marinade for basting.
  10. Arrange the wings in a single layer on the prepared rack.
  11. Roast for 30 minutes.
  12. Baste the wings with the reserved marinade.
  13. Turn the wings over and return them to the oven.
  14. Roast for an additional 30 minutes, or until deeply caramelized and cooked through to an internal temperature of 165°F (74°C).
  15. Transfer to a serving platter and serve hot.
