Ingredients

For the Wings

18 chicken wings, separated into flats and drumettes, tips removed

Vegetable oil, for frying

6 tablespoons butter

¼ cup hot pepper sauce

For the Blue Cheese Dipping Sauce

¼ pound blue cheese, crumbled

½ cup mayonnaise

½ cup sour cream

1 tablespoon lemon juice

1 tablespoon wine vinegar

Hot pepper sauce, to taste


Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Arrange the chicken wings in a single layer on a large baking sheet or roasting pan.
  3. Season lightly with salt and black pepper.
  4. Bake for 25 minutes.
  5. Carefully remove the pan from the oven and drain any accumulated juices.
  6. Pour the hot sauce over the wings and toss to coat evenly.
  7. Return the wings to the oven and continue baking for 20 minutes, or until fully cooked and lightly caramelized.
  8. While the wings finish cooking, prepare the dip.
  9. In a small bowl, combine the blue cheese, mayonnaise, and milk.
  10. Mix until smooth and creamy.
  11. Transfer the hot wings to a serving platter.
  12. Serve immediately with blue cheese dip and celery sticks.
