Ingredients

3 large egg yolks

1 tablespoon lemon juice

½ teaspoon Dijon mustard

½ teaspoon kosher salt

Instructions

  1. Melt the butter until very hot but not browned.
  2. Add the egg yolks, lemon juice, Dijon mustard, salt, and cayenne to the blender.
  3. Blend for 20 seconds.
  4. With the blender running, slowly drizzle in the hot butter.
  5. Blend until thick and creamy.
  6. Serve immediately.
