INGREDIENTS

For the Crab Cakes

1 pound lump crab meat

½ cup panko breadcrumbs

1 large egg

2 tbsps mayonnaise

1 tsp Dijon mustard

1 tsp Worcestershire sauce

1 tbsp chopped fresh parsley

½ tsp Old Bay seasoning

1 tbsp butter

For the Benedict

4 English muffins, split

8 large eggs

1 tbsp white vinegar

For the Hollandaise Sauce

3 egg yolks

1 tbsp fresh lemon juice

½ cup unsalted butter, melted

¼ tsp kosher salt

â…› tsp cayenne pepper

INSTRUCTIONS

  1. In a mixing bowl, gently combine the crab meat, breadcrumbs, egg, mayonnaise, Dijon mustard, Worcestershire sauce, parsley, and Old Bay seasoning.
  2. Form the mixture into eight crab cakes.
  3. Melt the butter in a large skillet over medium heat.
  4. Cook the crab cakes for 3 to 4 minutes per side until golden brown.
  5. Keep warm.
  6. Fill a saucepan with water and bring it to a gentle simmer.
  7. Add the vinegar.
  8. Crack each egg into a small bowl and carefully slide it into the simmering water.
  9. Poach the eggs for 3 to 4 minutes.
  10. Remove with a slotted spoon and drain well.
  11. To prepare the Hollandaise sauce, blend the egg yolks and lemon juice until pale.
  12. Slowly drizzle in the melted butter while blending continuously.
  13. Blend until thickened, then season with salt and cayenne.
  14. Place two toasted English muffin halves onto each serving plate.
  15. Top each half with a crab cake.
  16. Add a poached egg.
  17. Spoon the Hollandaise sauce generously over the eggs.
  18. Serve immediately.
