4 oz mushrooms chopped

2 tbsps unsalted butter

2 tbsps all-purpose flour

1 cup chicken stock

½ tsp kosher salt

⅛ tsp black pepper

2 cups mashed potatoes or cooked white rice, for serving (optional)

  13. Arrange the poached eggs on a warm serving platter.
  14. Spoon the strained mushroom sauce over the eggs.
  15. Top with the warm chopped ham.
  16. Garnish with mashed potatoes or cooked rice, if desired.

RECIPE NOTES

Heat Adjustment Suggestions

Simmer the sauce gently to allow the mushrooms and onion to develop their flavor without reducing the sauce too much. Maintain the poaching water at a gentle simmer for tender eggs with creamy yolks.

Make-Ahead Tips

Prepare the mushroom sauce up to one day in advance and refrigerate it. Reheat gently before straining and serving. The ham may also be chopped ahead of time. Poach the eggs immediately before serving for the best presentation.

Serving Suggestions

Serve with mashed potatoes, buttered rice, roasted asparagus, steamed green beans, sautéed spinach, or a crisp green salad. Garnish with chopped parsley or chives for added color.
