  9. Reduce the heat to low and keep the sauce warm for about 10 mins.
  10. Meanwhile, separate the eggs.
  11. Beat the egg yolks until thick and creamy.
  12. Stir the yolks into the warm onion sauce and remove the saucepan from the heat.
  13. In a clean mixing bowl, beat the egg whites until stiff peaks form.
  14. Gently fold the whipped egg whites into the onion mixture, taking care not to deflate them.
  15. Pour the mixture into the prepared baking dish and smooth the surface.
  16. Bake for 15 to 20 mins, or until the pudding is puffed, lightly golden, and set in the center.
  17. Serve immediately while the soufflé is still fully risen.
