DESCRIPTION

INGREDIENTS

6 large eggs

2 cups prepared cream sauce

2 tbsps chopped cooked lobster, crab, or sardines

1 tbsp tarragon vinegar

½ cup grated Parmesan cheese (for baked variation)

¼ cup fine dry breadcrumbs (for baked variation)

1 tbsp unsalted butter, cut into small pieces (for baked variation)

6 triangular toast pieces, for garnish

¼ tsp black pepper

INSTRUCTIONS

  1. Hard-boil the eggs according to the recipe in this cookbook.
  2. Cool the eggs, peel them, and cut them in half lengthwise.
  3. Carefully remove the yolks, keeping them intact.
  4. Slice the egg whites into thin strips.

Stovetop Version

  1. Warm the cream sauce over medium-low heat.
  2. Stir in the chopped lobster, crab, or sardines.
  3. Add the tarragon vinegar and season with the salt and black pepper.
  4. Fold the sliced egg whites into the sauce.
  5. Heat gently until thoroughly warmed.
  6. Carefully add the reserved egg yolks and warm for 1 to 2 mins without breaking them.
  7. Spoon the mixture into a warm serving dish.
  8. Garnish with toasted bread triangles and serve immediately.

Baked Gratin Version

  1. Preheat the oven to 400°F (204°C).
  2. Spread a thin layer of cream sauce in the bottom of a baking dish.
  3. Sprinkle with a layer of Parmesan cheese.
  4. Press the egg yolks through a fine-mesh sieve over the cheese.
  5. Repeat the layers until all ingredients are used, finishing with the sieved yolks.
  6. Sprinkle the breadcrumbs evenly over the top.
  7. Dot with the butter.
  8. Bake for 10 to 12 mins, or until heated through and lightly browned.
  9. Serve immediately.
