DESCRIPTION

INGREDIENTS

4 cups chicken broth

2 large eggs

1 tbsp cornstarch

2 tbsps cold water

1 tsp grated fresh ginger

1 tsp sesame oil

¼ tsp white pepper

2 green onions, thinly sliced

½ tsp kosher salt, or to taste

INSTRUCTIONS

  1. In a small bowl, whisk together the cornstarch and cold water until smooth.
  2. Pour the chicken broth into a medium saucepan and bring it to a gentle boil.
  3. Stir in the ginger, white pepper, and salt.
  4. Slowly whisk in the cornstarch mixture and cook for 1 to 2 minutes until the broth slightly thickens.
  5. Beat the eggs thoroughly in a small bowl.
  6. Reduce the soup to a gentle simmer.
  7. Slowly drizzle the eggs into the broth while gently stirring in one direction to create delicate ribbons.
  8. Remove the soup from the heat.
  9. Stir in the sesame oil.
  10. Garnish with sliced green onions before serving.

RECIPE NOTES

For additional flavor, add cooked chicken, mushrooms, corn, or peas.

A few drops of chili oil make a delicious spicy variation.
