DESCRIPTION
Chinese Tea Eggs are a traditional snack made by gently cracking hard-boiled eggs and simmering them in a fragrant broth of black tea, soy sauce, cinnamon, star anise, and citrus peel. As they soak, the shells create delicate marble patterns while the eggs absorb the rich aromatic flavors.

6 large eggs
4 cups water
2 black tea bags
¼ cup soy sauce
1 cinnamon stick
2 star anise pods
1 tsp whole black peppercorns
1 tsp sugar
1 strip orange peel
INSTRUCTIONS
- Place the eggs into a saucepan and cover with water.
- Bring to a boil and cook for 10 minutes.
- Transfer the eggs to cold water.
- Gently tap each shell with the back of a spoon until lightly cracked without removing the shell.
- Return the eggs to the saucepan.
- Add the fresh water, tea bags, soy sauce, cinnamon stick, star anise, peppercorns, sugar, and orange peel.
- Bring to a gentle simmer.
- Simmer for 1 hour over low heat.
- Remove from the heat and allow the eggs to cool in the liquid.
- Refrigerate overnight before peeling.
