Tender chicken breast transforms traditional Egg Foo Yung into a protein-packed entrée that's both satisfying and flavorful. Crisp vegetables and savory brown gravy complete this classic takeout favorite.
This recipe is an excellent way to use leftover rotisserie chicken while creating a wholesome homemade meal.
EQUIPMENT
INGREDIENTS
8 large eggs
2 cups cooked chicken, diced
1½ cups bean sprouts
½ cup mushrooms, sliced
¼ cup diced onion
2 green onions, sliced
1 tbsp soy sauce
½ tsp sesame oil
¼ tsp white pepper
2 tbsps vegetable oil
For the Gravy
2 cups chicken broth
2 tbsps soy sauce
1 tbsp oyster sauce
1 tbsp cornstarch
2 tbsps cold water
INSTRUCTIONS
- Whisk the eggs until smooth.
- Add the chicken, bean sprouts, mushrooms, onions, soy sauce, sesame oil, and pepper.
- Heat the oil in a skillet over medium heat.
- Spoon ½ cup portions into the skillet.
- Cook until golden brown on both sides.
- Prepare the gravy using the same method as the Classic Egg Foo Yung.
- Spoon the hot gravy over each serving.
