Ingredients

6 large eggs

1 tablespoon butter

½ cup cooked breakfast sausage, crumbled

½ cup cooked bacon, crumbled

1 cup frozen hash browns, cooked

1 cup shredded cheddar cheese

12 egg roll wrappers

1 tablespoon water

Oil for frying


Instructions

  1. Melt the butter in a skillet over medium heat.
  2. Scramble the eggs until just set.
  3. Remove from the heat and allow them to cool slightly.
  4. Combine the scrambled eggs, sausage, bacon, hash browns, and cheddar cheese in a mixing bowl.
  5. Mix gently until combined.
  6. Place an egg roll wrapper on a clean work surface.
  7. Spoon about ¼ cup of filling into the center.
  8. Fold the wrapper tightly and seal the edge with water.
  9. Heat the frying oil to 350°F (175°C).
  10. Fry the egg rolls for 3 to 4 minutes until crispy and golden brown.
  11. Drain on paper towels.
  12. Serve immediately.

Serve with maple syrup, country gravy, salsa, or hot sauce for dipping.

These egg rolls freeze well before frying and can be cooked directly from frozen by adding 1 to 2 minutes to the cooking time.
